Recipes/Sushi Rice

Using a sushi maker, add 4 green scoops - total 600g or 2 2/3 cups - of sushi rice to the bowl, and rinse well. prepare in the rice maker set for sushi rice. While the rice is cooking, prepare the flavouring:

- 120ml rice vinegar (120g) (for 750g rice: 150 ml or g)
- 15ml vegetable oil (15g) (for 750g rice: 19g)
- 120ml white sugar (105g) (for 750g rice: 150ml or 131g)
- 6ml salt (5g) (for 750g rice: 6.5g)
- 800g water total (for 750g rice 1000g)
Original:
- 110 ml rice vinegar (110g)
- 10 ml vegetable oil (10g)
- 60ml white sugar (55g)
- 5ml salt (4g)
Note that this is by far the best fresh. 2 scoops makes enough rice for 6-7 rolls.
